H2O Accounts for 98% of Coffee
When preparing a coffee beverage, water is just as important as the coffee.  Since water represents more than 98% of the beverage, it is important to use a filtration system for any municipal water source.

Water is rarely pure.  It contains chemical compounds in an infinite variety of combinations and concentrations that can cause unusual tastes, odors or colors.  Water can also contain living organisms, such as bacteria or molds, which the municipalities treat chemically with chlorine.

Chlorine and Your Coffee
Chlorine by itself has a low threshold concentration for both water (5 ppm) and for coffee (100 ppm).  The problem is that chlorine from the water often combines with the phenols from the coffee to produce a chlorophenol, which has an objectionable medicinal taste that can be detected at an extremely low level of concentration (0.001 ppm).  While chlorophenol is not harmful to humans, we believe chlorine should be removed by some type of activated carbon filter prior to coffee brewing.

Water quality is the degree to which water contains the desired level of mineral hardness, dissolved oxygen and absence of any chemical contaminants.
Water hardness is the amount of dissolved minerals in ordinary water, ranging from 50 parts per million (ppm) to 800 ppm in most municipal water supplies.
Water filters remove insoluble materials and sediments.
Demineralization can remove excessive dissolved solids.

Preliminary chlorination followed by an activated charcoal treatment can eliminate odors.
